Chicken Tinola
Tinola in Tagalog or Visayan or la uya in Ilocano is a soup-based dish served as an appetizer in the Philippines.Traditionally, this dish is cooked with chicken, wedges of green papaya, and leaves of the siling labuyo or chili pepper in broth flavored with ginger, onions and fish suce. A common variant substitutes fish or pork for chicken, chayote or sayote (in Tagalog) instead of papaya, or with tomatoes and moringa eaves known as marunggay or malunggay or kamunggay (in Cebuano), instead of pepper leaves.
Chicken Afritada

Chicken Afritada is another popular Filipino dish. Pieces of chicken are cooked in tomato sauce along with carrots, potatoes and bell peppers. Some prefer to add green peas and hot dogs as well, but I prefer my afritada without it. Another variation will use both pork and chicken or will use just pork. I like my afritada simple and easy, with just the basic vegetables.
Kare-Kare
Kare-Kare is a type of Filipino stew with a rich and thick peanut sauce. It is a popular dish in the Philippines served during special occasions. The traditional recipe is composed of ox tail. There are instances wherein both ox tripe and tail are used. The vegetable components of the dish are string beans, eggplant, bok choy, and banana blossoms. Lightly browned toasted ground rice is used to thicken the sauce.
